Broke Holiday Weekend=Lots of Cooking

I get creative in the kitchen when I’m broke, since it’s the one place I normally do not enforce a budget. Not enforcing a budget means when the zombie apocalypse happens, I won’t be like Tallahassee, looking for a Twinkie*, I’ll have access to a variety of foods I love. Plus, when I’m broke I still have something that will consume my time. When my four day weekend started, I made a trip to K&S and Kroger. Then I made a batch of My Mom’s Cookies
*If you haven’t seen Zombieland, you’re really missing out.

That’s a third of a cup of dough each. I doubled the recipe and used a flax egg instead-1T flax meal + 1/4 c warm water.

For dinner I made mushroom, onion and taco seasoned quinoa tacos with cabbage, leahey cheeze sauce, sour ‘cream’ and cilantro. NOM. Seriously amazing.

I found some giant yellow squash for $0.99/lb and promptly bought four humongous ones. They were just begging to be made into A cast-iron skillet version of this squash. You know, except not totally fat free. So I started out caramelizing half of a giant vidalia onion, then added the squash. So pretty in my 16″ double handled cast iron skillet.

I ended up with half of this left over, so I’ll have to figure out a creative and delicious way to use it. Maybe it will become a puree and be turned into a sauce. hrmm.

I’ve always loved Belgian White Ales. Always. I recently discovered I have a serious love for Hefeweizen as well. I actually think I always knew I had a love for hefeweizens, I just forgot. I didn’t drink beer for years because I thought I had a gluten intolerance. I’ve now figured out that super hoppy beers, as well as ryes and porters make me feel gross, but the lighter, malty beers seem to work out just fine. These are two of my favorites.

Yazoo Brewing Company is a local thing. If you can get it, you’re lucky and you should try them all! I’m extremely lucky to have access to such high quality beer. A lot of places in Nashville carry this. I think it’s cheapest at the brewery (obviously) and at Kroger, but Whole Foods and most local convenience stores seem to carry it. The other beer is Flying Dog, which hopefully most of you have heard of!

Last but not least, I FINALLY got the Mixology book that I won from Holland House Bar and Refuge This thing is extremely cool looking and I”m already learning a lot about the history of alcoholic beverages and combinations.

Soo…it looks like when I don’t have money to go out with my friends, I spend way more time in the kitchen. This isn’t even half of what I made over the weekend. I also made gigantic waffles with peanut butter coconut maple syrup, raw sun dried tomato pesto, taco dip, and mushroom burgers. I’ll save those things for a post tomorrow or the day after tomorrow.

What did you do this weekend? I skipped out on all the partying, I didn’t even choose to watch fireworks. I woke up with a great attitude today though, and I’m determined to create things to be excited about and to make my life what I want it to be! I can’t wait to get off work and go for a long walk through the park with my husband. I’m going to try to convince him that he should do the Zombie 5K with me in October. I hope I can get him to go for it. It would be really amazing if my husband did my first 5k with me. It would be his first too!

Chia seeds are my favorite egg substitute for the most part, and pumpkin tends to bind better than applesauce-especially in chocolate goods. I know a lot about food and nutrition, but that doesn't mean I'm the healthiest person. I tend to avoid eating out because I know I can make food that tastes better at home.

  1. This all sounds great! I can’t wait to see your next post about the other stuff. I especially love the squash. Weekends in the kitchen are great (if it’s not too hot)!

    2. I’m too lazy to own a cast iron skillet! Or anything else that needs immediate cleaning after use. hehehehe

    3. I want to do a marathon someday. But walking in Louisville has been a hike in itself, so when I’m not out of breath from that, I’ll upgrade. ha!

    4. Can’t remember if I like quinoa or not. My budget allows for very few grains outside of brown rice,
