Inspired by Sarah-Fae; I’m on a mission to find the most delicious raw cheese i can make. The dry mix was inspired by http://www.addictedtoveggies.com ‘s version. I’ll be honest with you; after smelling this spice mixture I wasn’t completely convinced that I would like this cheeze-or that the flavor would be “sour cream and onion” like-but I was wrong. It’s delicious
1/3 c raw macadamia nuts
3/4 c raw soaked cashews (soak for at least 8 hours before using)
3 T onion powder
1 t dill weed
1 t garlic powder
1/2 t salt (+/-)
1 t smoked paprika
1/2 t black pepper
juice from half of a lemon
1 T olive oil
1/2 t apple cider vinegar
3 T date water (can sub 1 T agave + 2 T water)
I always food process my nuts and liquids together first; and combine the spices separately in a small bowl before adding them to the food processor. Once your nut mixture is nut butter like; pulse in all your spices. Store in an air-tight container in the refrigerator; this should be good for five days-but I doubt it will last that long. I love this with broccoli, cauliflower and bell peppers (which i usually HATE).
