>Southwestern Chik’n Salad; VeganMofo#2

>I am not a fan of most analogue “meats.” Not only do they taste bad most of the time; but they’re quite costly.
That being said; you can season the heck out of Morning Star Chik’n meal starters and they come out delicious. They don’t taste like chicken (per the husband) but they can be pretty delicious. One of the things I miss most about eating meat is chicken salad. Bread & Company has an almond-tarragon version that’s delicious, and a honey pecan one. I did make some almond-tarragon; and i’ll share that recipe later-but I also made southwestern style; and my husband loved it!
10 morningstar chik’n strips
1 t olive oil
1 t cumin
1/2 t salt (+/-, to taste)
1/4 t chipotle chili powder
Sautee strips in olive oil over medium; after about a minute, sprinkle all spices evenly over the strips and continue cooking until all strips are browned on the outside. This takes about 5 minutes total.
Once your strips are finished, gather your other ingredients:
1 large, raw ear of corn on the cob (1/2 c corn)
1/2 stalk of celery
1/3 c small green grapes
1/4 c raw walnuts
3 T sliced raw almonds
2 T Veganaise
1 T cumin
1/4 t salt
1/4 t chipotle chili powder
Cut the corn off the cob and slice your celery thinly. Add corn, celery, grapes, and nuts to a bowl with spices. Combine well. Chop chik’n up into smally pieces and stir in. Lastly; add your veganaise. Everyone is different; so i would add this slowly to make sure you don’t use more “mayo” than you like. Combine well and refrigerate.

It’s not very photogenic…probably because i brown the chik’n in a lot of cumin and chipotle first.

I still think Earth Balance is the best fake butter, Vegenaise is the best vegan mayo, and Almond Milk tastes better than soy milk. Chia seeds are my favorite egg substitute for the most part, and pumpkin tends to bind better than applesauce-especially in chocolate goods. I know a lot about food and nutrition, but that doesn't mean I'm the healthiest person. I tend to avoid eating out because I know I can make food that tastes better at home.
