>Pantry challenge

>Pantry cooking is fairly boring to be honest; I don’t feel like the things I’m making are recipes that are worth sharing.

I made vegetable soup with No-Chicken broth (Apparently i bought TWO cartons of this for Thanksgiving), onions, carrots, celery seed, garlic, zucchini, cabbage, spinach, potatoes, diced canned tomatoes and cannellini beans; plus a little thyme and a little oregano. This is my lunch for the week. It’s delicious, filling and full of vegetables.
Last night I discovered that I had 3/4 of a block of tofu still sitting in the marinade for Delicious Vegan Bacon and since it had been there for oh, a good five days, I figured I should make it. All of it. So I have lots of tofu to snack on. Then I went ahead and made a double batch of my Parma minus the chipotle pepper.

The husband and I had a simple dinner last night; I baked some of the Unhealthy Bacon (it is so not as good baked, but it’s still very flavorful), made some broccoli with garlic and soy sauce, and Vegan Yum Yum’s Crash Hot Potatoes which are ALWAYS delicious. Wes doesn’t even know that they’re vegan. Honestly-there’s so much oil on them that they’re ridiculously unhealthy regardless.

I still think Earth Balance is the best fake butter, Vegenaise is the best vegan mayo, and Almond Milk tastes better than soy milk. Chia seeds are my favorite egg substitute for the most part, and pumpkin tends to bind better than applesauce-especially in chocolate goods. I know a lot about food and nutrition, but that doesn't mean I'm the healthiest person. I tend to avoid eating out because I know I can make food that tastes better at home.
