>Raw Food!

>I’ve had raw food on my mind lately….probably beause I’ve been trying to kick white sugar. When I think of desserts, I think of Celine because she has the first vegan blog I started reading-and because her desserts are amazing. This weekend; I made my own version of her Raw-uhm-Balls. I’m not the biggest fan of figs; but I was going to buy some anyways…then the husband reminded me that I’ve committed not to buying ingredients just because a recipe calls for them when I have things I can easily use at home. Darn that husband.
Here’s what I did…

(makes 14 balls)
3/4 c raw sunflower seeds
1/4 c raw pumpkin seeds
2 T raw almonds
1 T +1t cocoa powder
2T raw coconut oil
4T raw agave
1 c dates, chopped as small as you can (1/3lb fresh, before being pitted)
9 dried apricots, chopped in small pieces
1/2c dry coconut shreds, unsweetened

You need a large (at least 6 cups) food processor for this; or you will need to half this recipe.

Food process the coconut shreds to powder. Pour into a bowl and set aside. Do not rinse out the food processor.
Pulse sunflower seeds, pumpkin seeds and almonds until they’re dust. Add cocoa powder and pulse a few more times. Add remaining ingredients (besides coconut powder) and pulse until well combined.
Scoop out mixture with a tablespoon (rounded off), form balls and roll in coconut powder. Refrigerate and enjoy. I’m having one for breakfast with my smoothie today!

Chia seeds are my favorite egg substitute for the most part, and pumpkin tends to bind better than applesauce-especially in chocolate goods. I know a lot about food and nutrition, but that doesn't mean I'm the healthiest person. I tend to avoid eating out because I know I can make food that tastes better at home.
