>I’m not supposed to be baking. I’m supposed to be leaving sugar out of my diet. This was my idea. I really need to drop all these extra pounds I piled on while making every vegan baked good known to man. I seriously baked two or three times a week the first couple of years I was vegan. Just to you know, prove that vegan baked goods were delicious. I guess I was proving that to myself? Ha! I proved vegans can be fat I suppose. Oh well. I made cookies last night. I have no idea what on earth made me make oatmeal raisin cookies. I’ve never liked this kind of cookie. I always hated raisins. Until I found golden raisins and for some reason; I love those. I’m a weirdo I guess. Another part of what turned me off from oatmeal cookies was the cinnamon. I like cinnamon…sometimes. I don’t like it to be a main flavor; I never have. Once, I read Eat Right for your Blood Type and it even says cinnamon is bad for me. These have cinnamon in them; but not much!

Golden Raisin and Walnut Oatmeal Cookies
Preheat the oven to 350 degrees and spray 2 cooking sheets lightly with canola oil

Mix in a medium bowl and set aside:1 and 1/4 c whole wheat pastry flour
1 and 3/4 c old fasioned rolled oats
1 t baking powder
1/4 t sea salt
1/2 t cinnamon
1/2 t ground ginger

also, set aside:
1/2 c golden raisins
1/2 c walnuts

Mix together well in a large bowl:
1/4 c peanut oil (canola would work too)
1/4 c applesauce OR one small mashed banana
3/4 c sucanat or raw sugar
1 t vanilla
1/4 unsweetened plain soy milk
2 Ener-G Eggs prepared (3 t Ener-G + 4 T warm water)

Once the wet ingredients are combined; stir in the dry ingredients, including the raisins and walnuts. Stir well to combine and drop by tablespoon full on the cookie sheets. You should end up with 2 dozen cookies. Bake them for 12 minutes; then cool completely.

I still think Earth Balance is the best fake butter, Vegenaise is the best vegan mayo, and Almond Milk tastes better than soy milk. Chia seeds are my favorite egg substitute for the most part, and pumpkin tends to bind better than applesauce-especially in chocolate goods. I know a lot about food and nutrition, but that doesn't mean I'm the healthiest person. I tend to avoid eating out because I know I can make food that tastes better at home.

  2. >Yum! I love oatmeal raisin cookies. Okay, confession: I love all cookies! BTW, Wild Cow was so fantastic. I can't wait to go there again. The Grasshopper Cake was seriously, the best cake I've ever had.
