My husband has been sick for a couple of days and food hasn’t been appealing for him. So yesterday, I was surprised when he asked if I wanted to go to The Wild Cow Vegetarian restaurant. This place is actually vegan unless you request organic dairy cheese on your salad. I love the wild cow, I can walk there from my house and it’s the only all vegan place in town. Yesterday I ordered the entree sized version of the Chili Verde Caesar salad with tofu. This salad has the best, freshest, lightest dressing I have ever had. I wish I could figure out how to make it. This salad features green leaf lettuce, chilled roasted beet slices, chili coated jicama match sticks, chili verde seasoned grilled tofu, red onions and that amazing dressing I mentioned. I couldn’t resist taking home some raw tiramisu. I love this raw dessert. Sorry the picture of the salad isn’t better!!
