>I’ll start with the least pretty, Sun Dried Tomato and Olive Pesto

Yes, it’s ugly. Yes, it looks kind of unappetizing…but looks can be, and often are, deceiving. So try it!
This is how I pretty much start every day. I pack the blender half full of spinach, put 1/4 c blueberries and one small frozen banana on top, and top it off with Almond Milk. Using the banana to weigh down the spinach means your greens will get pulverized, even if you don’t have a super fancy blender. For the record, my Oster cost me $30 and it’s rated well on Consumer Reports.
Next is a Pear tart with Cinnamon Vanilla Anise Caramel. This was a complete bitch to make, as in it took multiple hours, then I was disappointed with the taste, it could’ve used something…

Last, I have a Pecan-Date cake from 500 Vegan Recipes. I used Cinnamon Whiskey to make the glaze. MMMMMMMMMMMMM. Yes, a slice is missing…because I had to sample this!!

About laceythevegan

I'm a reader, a food lover, a crazy cat lady, an animal lover, local shopper and local music supporter. You can find me in East Nashville most of the time, shopping, having a drink at a locally owned bar, or eating food at a local restaurant. I like cumin and smoked paprika way more than I should, winter squashes make me happy, and while I do like most fruits, I only *love* berries and mangoes. I'd rather have salty snacks than sweets, and the darker chocolate is, the better. I still think Earth Balance is the best fake butter, Vegenaise is the best vegan mayo, and Almond Milk tastes better than soy milk. Chia seeds are my favorite egg substitute for the most part, and pumpkin tends to bind better than applesauce-especially in chocolate goods. I know a lot about food and nutrition, but that doesn't mean I'm the healthiest person. I tend to avoid eating out because I know I can make food that tastes better at home.

  1. >I have an Oster too, but I'm not crazy about it. It only blends when it feels like it…I wish someone would buy me a Vitamix.

  2. >I love my Oster blender! I have the one that's for smoothies and doubles as a food processor. I never use it for food, but it works great for smoothies.
