I miss spring/summer

Good Morning!
Start your Monday right and treat yourself to a breakfast of vegetables. It’s not as hard as you might think. Seriously…
you know this looks awesome:

Simple salt/pepper roasted butternut squash, and my favorite tofu scramble, which involves my homemade parma, mushrooms, basil, spinach and onions. If you cube your squash ahead of time, this whole meal comes together in 15 minutes. I used my iron skillet for the scramble, I know I need more iron in my life.
I am not a warm weather person. Besides the fact that I’m ridiculously pale and repeteadly burn in the summer, I carry about 40 pounds more than I should right now and I sweat a lot anyways. Then there’s the clothes issue. When I don’t feel my best about my body, I don’t wear cute clothes because..I don’t look cute in them. I’m working on it. It’s hard to stay motivated! Anyways, I’m sure you get the idea…I hate the heat.
But that’s when produce is best. And wouldn’t you know that I’ve been dreaming of these bad boys:

When I was a kid, if you told me that when I grew up I’d choose to survive on vegetables, I would have laughed in your face. I did not like peas or beans of any kind, and I sure didn’t like tomatoes, any kind of greens, mushrooms, or even onions. [What was wrong with me? My mom definitely tried to make us eat healthy foods!]

Have any of you guys ever been to the Grand Lux Cafe? Well if you have, you may have noticed there wasn’t really much you could eat there, but that there are meals that are just begging for veganization. Like these bad boys:
. These are what’s on Grand Lux’s menu. I took a picture when my mom had some so that I could veganize them from memory. I have eaten these w/o the chicken when I was still vegetarian. I remember thinking the flavor combination was GENIUS. I used spring roll wrappers for the chips, made a sweet but spicy peanut sauce, used gardein chik’n strips, and I ended up making some edamole for mine(guac made using edamame, chili toasted sesame oil, sambal olek, lime juice and black sesame seeds), drizzled sambal infused thinned out sour scream on top, then of course put rice in the middle and garnished with green onions and a squeeze of lime juice. My picture wasn’t at all attractive since it was night time, so this is an old shot :/

I hope everyone had a great weekend. I’m trying to stay positive and be grateful for all the wonderful people in my life.

I like cumin and smoked paprika way more than I should, winter squashes make me happy, and while I do like most fruits, I only *love* berries and mangoes. I'd rather have salty snacks than sweets, and the darker chocolate is, the better. I still think Earth Balance is the best fake butter, Vegenaise is the best vegan mayo, and Almond Milk tastes better than soy milk. Chia seeds are my favorite egg substitute for the most part, and pumpkin tends to bind better than applesauce-especially in chocolate goods. I know a lot about food and nutrition, but that doesn't mean I'm the healthiest person. I tend to avoid eating out because I know I can make food that tastes better at home.

  1. I love the heat!! I can’t wait until later this week when it’s supposed to reach 77 in Memphis. I’m super sensitive to the cold, and I keep my heat cranked up until about mid-April!! I’m one of those weirdos who actually loves the Southern humidity….I like to walk outside and break into an instant sweat. 🙂

  2. I’m with you on hating the heat. I wish I could make it spring time forever. I am so with you on veganizing old favorites. I love to do that.
