Some of my favorite things and sad news

Posted on

I’m going to start with the sad news. My sister-in-law accidentally backed over our family dog. Abbie has been part of our family for 15 years now. She is hurt pretty badly and we are not sure she will make it. She has blood in her lungs and possibly has spinal cord damage that will leave her paralyzed, but we are not sure yet. She is still at the pet hospital and she is being taken to her regular vet this morning. Abbie is a peek-a-poo that we adopted in 1996. Please send positive vibes to my family. We are devastated. I will find some pictures to put up this afternoon.

My favorite coffee besides Drew’s Brews. I only treat myself occasionally to a Costco Sized bag of this business.
I feel like I should have known about this creamer years ago. It took me more than two years to give up CoffeeMate. This is a very close replacement that doesn’t separate in coffee, it doesn’t curdle and it doesn’t taste strange.
Perfect, frothy latte-made at home. Thanks husband for my milk frother.
Sunday funday. Typical. 2-4-1’s. Fireball and Yazoo Hef, my secret lover.
The beginnings of quinoa tabbouleh. I used shaved zucchini, parsley, mint and tomatoes as a base, then added quinoa, lemon juice, olive oil, cumin, garlic and salt.
Isn’t it gorgeous?
Typical lunch…veggie chili. Packed with beans, tomatoes, jalapenos and corn. Simple and delicious.

About laceythevegan

I'm a reader, a food lover, a crazy cat lady, an animal lover, local shopper and local music supporter. You can find me in East Nashville most of the time, shopping, having a drink at a locally owned bar, or eating food at a local restaurant. I like cumin and smoked paprika way more than I should, winter squashes make me happy, and while I do like most fruits, I only *love* berries and mangoes. I'd rather have salty snacks than sweets, and the darker chocolate is, the better. I still think Earth Balance is the best fake butter, Vegenaise is the best vegan mayo, and Almond Milk tastes better than soy milk. Chia seeds are my favorite egg substitute for the most part, and pumpkin tends to bind better than applesauce-especially in chocolate goods. I know a lot about food and nutrition, but that doesn't mean I'm the healthiest person. I tend to avoid eating out because I know I can make food that tastes better at home.
